I'm currently drowning in school work because I have a midterm on Wednesday. But I thought I would take a quick moment to share my breakfast today. When I woke up this morning I was craving some sweet, fluffy pancakes and so I whipped up my favorite, healthy and extremely easy Oatmeal Banana Pancakes. I thought I would share it with you because who doesn't love pancakes?! AND they're healthy (double score). They're made with simple ingredients that most people already have in their kitchen.
Wish me luck on my midterm, after that I can relax a bit. Bonus: My birthday is at the end of the week! (happy dance)

- 1 Large Ripe Banana
- 1/3 Cup of Oatmeal
- 2 Egg Whites
- 1 Tsp of Chia Seeds
- 1/2 Tsp of Cinnamon (you could add more to taste)
In a blender add egg whites, banana and oatmeal and blend until smooth for 2 minutes. Add cinnamon and chia seeds and blend for another 2 minutes. The longer you blend the fluffier your pancakes will be. If it's too watery add a bit more oatmeal if it's too thick you could add a splash of milk or water. Lightly coat a pan with olive oil or coconut oil (my recent favorite discovery) and heat over medium high. Drop in the batter to your preferred size of pancake and allow to cook for about 2 minutes on either side or until golden brown on either side.
Serves 1 and makes about 3 medium to small pancakes.
I like to top with berries or fruit and add peanut butter in between them and drizzle over with Agave Syrup (a healthier and natural sweetener). To spice these up you could even add blueberries to the batter, nuts, or chocolate chips.
